Saint Patrick, the patron saint of Ireland, probably ate fare similar to today’s pricey health foods such as cereal, fish and seaweed, according to a researcher who has studied the country’s 5th century diet.

Food historian Regina Sexton said records kept by monks showed that Patrick, who is credited with ridding Ireland of snakes and spreading the Christian message, most likely drew his sustenance from cereals and dairy produce such as sour milk, flavored curd mixtures and a variety of soft and hard cheeses.

It is safe to say that obesity was not a problem in those days, and that the fare was seasonal, wholesome and modest by today’s standards,” said Sexton of University College Cork.

A corresponding factor in reduced obesity had to be the hard work. Field hands back then often ate 2 lbs. of cheese per day. But, they used up more than four thousand calories at work.

Having arrived in Ireland as a slave after what was probably a cold and hungry journey from Britain, the future saint most likely snacked on wet preparations like porridge, gruel and meal pastes.

Other culinary delights he could choose from included hen and goose eggs, honey, curds, seaweeds and apples, which he could garnish with a dash of wild garlic or watercress.

Fish like salmon, trout and eel or meats like hand-cured pork were also on 5th century Irish menus, while flat breads made from oats, barley, a little rye and some of the altogether more exclusive wheat, added some bulk.

“Ironically, much of the food available then is what we call ‘health food’ now, which comes of course, at a premium price,” Sexton said.

I’ll forgive him converting Ireland to Christianity.

As for the “health food” comparison – a great deal of what the article discusses is Ireland’s answer to a Mediterannean Diet. The only goodies that get expensive are some of the seafood if you live in the Southern Rockies as I do. Otherwise, I grew up with most of the same foodstuffs in New England. Maybe a bit more white bread and beef – my family back in the Outer Hebrides were cattle drovers for centuries. No doubt they got a bit of beef, once in a while.

Kellogg recalls 28 million boxes of stinky cereal

Kellogg is voluntarily recalling about 28 million boxes of Apple Jacks, Corn Pops, Froot Loops and Honey Smacks cereals because an unusual smell and flavor from the packages’ liners could make people ill…

Kellogg is trying to identify the substance on the liners that’s causing the problem and is offering consumers refunds in the meantime.

The products were distributed throughout the U.S. and began arriving in stores in late March.

Only products with the letters “KN” following the use-by date are included in the recall. Products in Canada are not affected.

Too bad they had to retrieve this crap so soon. Probably had a shelf life good for another decade or so.

Understanding the Stone Age pantry

The consumption of wild cereals among prehistoric hunters and gatherers appears to be far more ancient than previously thought, according to a University of Calgary archaeologist who has found the oldest example of extensive reliance on cereal and root staples in the diet of early Homo sapiens more than 100,000 years ago.

Julio Mercader…recovered dozens of stone tools from a deep cave in Mozambique showing that wild sorghum, the ancestor of the chief cereal consumed today in sub-Saharan Africa for flours, breads, porridges and alcoholic beverages, was in Homo sapiens’ pantry along with the African wine palm, the false banana, pigeon peas, wild oranges and the African “potato.” This is the earliest direct evidence of humans using pre-domesticated cereals anywhere in the world…

This broadens the timeline for the use of grass seeds by our species, and is proof of an expanded and sophisticated diet much earlier than we believed,” Mercader said. “This happened during the Middle Stone Age, a time when the collecting of wild grains has conventionally been perceived as an irrelevant activity and not as important as that of roots, fruits and nuts.”

In 2007, Mercader and colleagues from Mozambique’s University of Eduardo Mondlane excavated a limestone cave near Lake Niassa that was used intermittently by ancient foragers over the course of more than 60,000 years. Deep in this cave, they uncovered dozens of stone tools, animal bones and plant remains indicative of prehistoric dietary practices. The discovery of several thousand starch grains on the excavated plant grinders and scrapers showed that wild sorghum was being brought to the cave and processed systematically.

“It has been hypothesized that starch use represents a critical step in human evolution by improving the quality of the diet in the African savannas and woodlands where the modern human line first evolved. This could be considered one of the earliest examples of this dietary transformation,” Mercader said. “The inclusion of cereals in our diet is considered an important step in human evolution because of the technical complexity and the culinary manipulation that are required to turn grains into staples.”

Mercader said the evidence is on par with grass seed use by hunter-gatherers in many parts of the world during the closing stages of the last Ice Age, approximately 12,000 years ago. In this case, the trend dates back to the beginnings of the Ice Age, some 90,000 years earlier.

Bravo! Another step forward in our understanding of the anthropology of evolution and nutrition.

Steal cereal and some milk in Florida – get 15 years in prison

A homeless alcoholic has been sentenced to 15 years in prison for stealing milk and a box of Lucky Charms, authorities in Lakeland, Fla., said…

Mark Griffin’s most recent arrest came April 19 for stealing a $4.49 box of Lucky Charms cereal and a $1.59 can of milk from a Walgreens, police said. Griffin had been banned from the store previously.

A jury in August convicted Griffin of robbery and trespassing after he rejected a plea deal in which prosecutors offered a him a sentence of three years in prison and two years probation.

Acknowledging Griffin was a chronic alcoholic, Circuit Judge Donald Jacobsen said he was mandated by law to impose the 15-year prison sentence.

“Personally, I think the money could have been better spent in treatment than incarceration for 15 years, but that is not my decision,” Jacobsen said.

Of course. Readers outside the United States have to understand our politicians feel that thinking, evaluating, judging a punishment to fit the crime is too difficult a task for them to face. Why should they ask a “judge” to do so.

We end up with “one size fits all” for crimes regardless of circumstance and context. No place for justice in the equation.

Most American voters would apparently agree; so, it works fine for the politicians.

Whole grain cereals, popcorn are rich in antioxidants

In a first-of-its kind study, scientists reported today at the 238th National Meeting of the American Chemical Society (ACS) that snack foods like popcorn and many popular breakfast cereals contain “surprisingly large” amounts of healthful antioxidant substances called “polyphenols.”

Polyphenols are a major reason why fruits and vegetables — and foods like chocolate, wine, coffee, and tea — have become renowned for their potential role in reducing the risk of heart disease, cancer, and other diseases.

Until now, however, no one knew that commercial hot and cold whole grain cereals — regarded as healthful for their fiber content — and snack foods also were a source of polyphenols.

Early researchers thought the fiber was the active ingredient for these benefits in whole grains, the reason why they may reduce the risk of cancer and coronary heart disease,” said Joe Vinson, Ph.D., who headed the new study. “But recently, polyphenols emerged as potentially more important. Breakfast cereals, pasta, crackers, and salty snacks constitute over 66 percent of whole grain intake in the U.S. diet.”

Vinson, a chemist at the University of Scranton in Pennsylvania, said “We found that, in fact, whole grain products have comparable antioxidants per gram to fruits and vegetables. This is the first study to examine total phenol antioxidants in breakfast cereals and snacks, whereas previous studies have measured free antioxidants in the products…”

The whole grain cereal with the most antioxidants are made with wheat, with corn, oats and rice cereals following in descending order, according to Vinson. He also noted that raisin bran has the highest amount of antioxidants per serving, primarily due to the raisins.

Bran cereals made from wheat overall do not have more antioxidants than wheat cereals, though they do have more fiber, he said. In other findings, he said that whole grain flours are very high in antioxidants; whole grain snacks have slightly lower levels of antioxidants than cereals; of snacks, popcorn has the highest level of antioxidants; and there is a wide variation in the amount of antioxidants in each class of cold cereal.

OK, so when you’re preparing your popcorn – turn it into a thoroughly Mediterranean snack. Instead of drizzling melted butter over it, put a couple ounces of a good virgin olive oil in a microwave-capable glass measuring cup – along with a few finely chopped garlic cloves. Microwave it for 5 minutes at about one-third power.

Pour that over your popcorn along with a minimum of salt – and Rock On!
